One of my daddy’s favorite meals was corned beef. Mom would cook it for hours in her stove top pressure cooker. You know, the one with the thing on top that would rock back and forth and scare us? It seemed about to blow up! That thing always made me nervous. Hence, my siblings and I weren’t even allowed in the kitchen when she used it. Thanks to modern technology, there is no need to be afraid of this shreddable pressure cooker corned beef!
Alas, as an adult I reverted to cooking corned beef in my slow cooker, but it just wasn’t the same. Maybe it is because you have to use so much water in a slow cooker that the meat just loses it’s yummy corned flavor.
Needless to say, I very rarely cooked it. That is until my husband gave me a Farberware 7-in-1 electric pressure cooker for Christmas! Don’t think bad of him, I asked for appliances.
Experimenting in the kitchen is a hobby for me. To do that I need some “toys”, aka appliances. Okay, back on track, corned-beef, right?
I know Steve likes Ruben sandwiches and in the little over two years of marriage I had not made them. I decided to surprise him with corned-beef and cabbage for dinner one night shortly after receiving my PC. He was skeptical when he saw what was for dinner because he had never had good home cooked corned-beef. Boy, pleasantly surprised! He now raves to anyone who will listen about my shreddable pressure cooker corned-beef.
This pressure cooker corned beef recipe is easy. It does take about 2 hours total to prepare but it is well worth it. The left overs (if there are any) make great Ruben sandwiches.
The last time I made it I hadn’t started blogging yet so I only took one picture of the finished meal. Next time I make it will be sure to take more pictures and update this post.

Corned-Beef & Cabbage
- 3 pound corned- beef brisket with season packet
- 3 cloves garlic chopped
- 1/2 medium onion sliced
- 2 T olive oil
- 2 c beef broth
- 1 c water
- 3-4 red potatoes quarter
- 1 head cabbage quartered
- My pressure cooker is a Farberware so the instructions reference those controlsP9- Saute/Sear Heat oil and saute garlic and onion; add season packet, turn offPlace meat on top of onions & garlic. Add broth and enough water to just cover top or meat.P5- Meat/Steak Cook 90 minutesAllow to natural release for 5 minutes, then quick release. Remove meat and cover with foil to keep warm.
- P7 – vegetable Cook potatoes 6 minutes, quick release. Add cabbage. (Leave potatoes)p7- vegetable Cook 6 minutes, quick release.
